Phone/PDA Active Sync -- Cant change Exchange UserName -- Is grayed out:

Delete the Exchange account in Active Sync on the PDA

Active Sync --> Menu --> Options --> Menu --> Delete

PS: This will not delete the data, only the account. If you also want to delete the data, I think I'd just reset the phone.
